Instructions

  1. For the soup, pitted half an apple, but unpeeled, cut into fine cubes. Cut 100 g of peeled celery into fine cubes. Set aside the apple and celery cubes with 15g butter.
  2. Peel the onions and celery and cut into cubes. Peel and core the apple and cut into cubes.
  3. Sauté the onions in butter until golden. Add celery and apple cubes and sauté briefly, add apple cider and vegetable stock and let everything simmer for about 30 minutes. Finely puree the soup with the addition of cream and season with salt, pepper and sugar.
  4. Sweat the celery cubes for the soup in butter, add the apple cubes and swirl everything again and distribute on the prepared soup.
