Instructions

  1. For the dressing, mix the olive oil, balsamigo bianco and the two types of mustard well with a whisk, add the chives and season with salt and pepper.
  2. Mix the fennel, celery and olive slices with 2/3 of the dressing and let it steep for about 15 minutes.
  3. Arrange the salad on flat plates, spread the onion rings and the feta cubes over them and drizzle the rest of the dressing over them.
