Ingredients
- 1 large fennel, finely sliced
- 6 stalks celery, cut into fine slices
- 400 g feta cheese, cut into cubes
- 1 bunch chives, cut into fine rolls
- 1 onion (s), red, cut into thin rings
- 12 olives, green, pitted, cut into rings
- 3 tablespoon balsamic vinegar
- 4 tablespoon olive oil
- 1 teaspoon mustard, sweet
- 1 teaspoon mustard, medium hot
- Pepper from the grinder
- salt
Instructions
- For the dressing, mix the olive oil, balsamigo bianco and the two types of mustard well with a whisk, add the chives and season with salt and pepper.
- Mix the fennel, celery and olive slices with 2/3 of the dressing and let it steep for about 15 minutes.
- Arrange the salad on flat plates, spread the onion rings and the feta cubes over them and drizzle the rest of the dressing over them.
