Wash and clean celery and cut into very small cubes, wash tomatoes and spring onions well and also cut into small cubes. Squeeze the garlic and add to the salad, pepper well, add a little salt (the cheese is usually salty) and pour the juice of 1.5 lemons over it. Crumble the feta very finely and pour over it.
Mix everything well, season to taste and let steep for 20 minutes. If you want, you can add olive oil, but you don`t have to (the feta has enough fat).
