- Clean and wash the celery, save the greens. Cut individual sticks into 3-4 long pieces and drain.
- Mash the Gorgonzola with a fork, stir in the cream. Mix in the mascarpone spoon by spoon and season with pepper. Stir to a smooth cream.
- Put the cheese cream in a bowl and serve the celery pieces next to it, garnish with celery greens.
- Note: celery - a favorite child of the Italian vegetable kitchen. The largest growing area is in Piedmont, closely followed by Latium and Apulia.
