- Cover the cereals with water and soak overnight.
- The next day, pour off the grain and drain well in a sieve.
- Fry the cereals in the olive oil, carefully season with salt.
- Gradually add the vegetable stock and stir again and again.
- It takes about 30 minutes for the cerealiotto to have the right consistency.
- In the meantime, grate the parmesan. Finally fold the parmesan into the grain.
- Season to taste and serve with fried spring onions and purslane, for example.
- The amount is enough as a secondo or side dish to the main course in a multi-course menu for 6 people.
