Put the cream, milk, 50 g sugar, vanilla sugar and salt in a saucepan and heat carefully, stirring occasionally. Stir the egg yolks vigorously with 50 g sugar until the sugar has dissolved. As soon as the cream milk is hot, gradually stir into the egg yolk and sugar mixture. Heat the mass again. Mix the Chai Latte powder with the hot water. Add the mixed Chai Latte and stir vigorously.
Let the cream cool down. For those in a hurry: Cooling down can be accelerated in a cold water bath.
Preparation in the ice cream machine:
Put the cream in the ice cream maker and, depending on the device, let it freeze for about 30-40 minutes.
Preparation without an ice cream machine:
Pour the cream into a freezer-safe plastic container and let it freeze in the freezer for approx. 4-5 hours. Mix vigorously after approx. 1 hour with a whisk or hand blender. Repeat this process every hour.
