Thoroughly clean the chanterelles. Cut the bacon into strips and fry them in a pan over medium heat without any additional fat until crispy. Add the herb butter and heat it up, then the chanterelles. Fry everything for about 2 - 3 minutes. First remove the stalks from the rocket, then cut across into strips. Mix with the chanterelles and season with salt, pepper and balsamic vinegar. Fry fried eggs from the eggs. Serve together. A slice of farmhouse bread with butter. A nice starter without fried eggs.
