Mix the flour, except for 2 tablespoons, sugar, salt and vanilla sugar. Melt the fat and pour over it. Use the dough hook to work the ingredients into sprinkles. Scatter the remaining flour over the crumble and shake everything in the bowl. Grease a springform pan and firmly press 2/3 of the crumble mixture as a base. Spread the applesauce on the base.
Stir the fat until frothy, stir in the sugar, vanilla sugar, lemon zest and juice. Add the eggs and stir the mixture until creamy. Stir in the quark and pudding powder. Spread the quark mixture on the apple sauce, sprinkle the remaining crumble dough on the edge.
