Chop the ham, spring onions and mushrooms. Then heat the fat in a high-walled pan and sear the ham with the spring onions. Add the mushrooms and continue frying at high temperature until most of the liquid has boiled down. Switch the temperature back to medium heat. Put the processed cheese in the pan and let it melt while stirring constantly. Top up with cream and give the sauce a pink color with the tomato paste. Season to taste with salt, pepper, sugar and herbs.
