Mix the cheese, yogurt and eggs in a bowl with a fork and sprinkle with the flour.
Put plenty of breadcrumbs on a plate. Shape the cheese mixture into flat escalopes one after the other, place on the breadcrumbs, press down a little so that it sticks. Since the schnitzel is difficult to turn, sprinkle the top with breadcrumbs and also press down a little.
Heat the fat in a pan and slide in the schnitzel one at a time using a spatula. After approx. 3 - 5 minutes, carefully turn the schnitzel and fry from the other side.
Since the unroasted schnitzel is very unstable, you should either store it on a smooth surface or put it in the hot fat immediately after breading.
