Finely dice the onion, crush the garlic, cut the paprika into fine strips, sauté in a pan with butter until translucent. Take out the vegetables and keep warm.
Steam the flour in the fat, deglaze with half of the broth. Add the cheese and stir until smooth. Pour in the rest of the broth and bring to the boil briefly. Then stir in the crème fraîche and season the soup with spices. Finally fold in the pepper strips.
