Work the egg yolks, flour, butter and cheese into a firm dough. Wrapped in foil, leave to rest in the refrigerator for 30 minutes.
Shape the dough into a roll with a diameter of approx. 6 cm on a floured work surface. Cut the roll into about 35 slices and carefully distribute on two baking sheets lined with baking paper.
