Season the meat with salt, pepper and garlic. Mix well.
Halve the onion and then cut out large rings. Cut the cheddar into square slices.
Fill each onion ring with a little mince. Place a cheddar slice on each. Cover with mince and press down well.
Put the flour and breadcrumbs in a bowl each. Whisk the eggs in another bowl.
First dip the filled onion rings one after the other in egg, flour and breadcrumbs. For a crisp breading, just dip it one more time in the egg and breadcrumbs.
Fry the rings in a deep fryer or saucepan. Drain on paper towels. Serve with your favorite sauces.
