Instructions

  1. For the shortcrust pastry, sieve the flour and baking powder and make a well. Add egg white and sugar, place margarine in pieces on the edge of the flour. Knead everything and put in a cool place for approx. 30 minutes.
  2. Only grease the bottom of a springform pan (26cm) with margarine or butter.
  3. Roll out the shortcrust pastry on a lightly floured surface, round and not too thin (should not be much larger than the springform pan) and cut out a round base with a cake ring. Place the cut-out shortcrust pastry in the greased springform pan and preheat the oven to 180 ° C.
  4. For the cheese mixture, put the cream, milk, sugar, egg yolk, salt, custard powder and vanilla sugar in a bowl and stir with a hand mixer.
  5. Wash and core the plums and cut into small pieces. Mix the fruit pieces with the cheese mixture and then spread them on the shortcrust pastry base and smooth them out.
  6. For the meringue, beat the egg whites until stiff, drizzle in the sugar. Beat the milk, egg yolk, vanilla sugar and flour until frothy and fold into the egg whites. Pour onto the cheese mixture and spread with a brush. Let the cake bake for approx. 60 minutes.
  7. After 20 minutes, use a knife to cut approx. 2 cm deep into the cheese mixture from the edge to the center and let it bake again. Let stand in the switched-off oven for approx. 30 minutes. Take out and let cool on a rack.
  8. Loosen the edge of the mold with a knife all around and remove it. Loosen the cake from the bottom of the tin and place it carefully on a cake plate with a cake server. Dust with icing sugar and garnish with the plums.
