Instructions

  1. First let the turkey or chicken simmer in the broth, then remove it, let it cool down a little and cut into smaller cubes.
  2. Peel the sweet potato and cut into cubes.
  3. Sweat the onion cubes in the butter, add the sweet potatoes, fill up with the chicken stock and season with salt, pepper and chilli flakes. Cook until the sweet potatoes are tender.
  4. Puree the soup with a hand blender. Add the cream, meat and corn and bring the soup to the boil again.
  5. Scoop onto deep plates and serve sprinkled with the spring onions.
