- Grind the cookies with a blender.
- Mix crushed cookies with melted butter.
- The result is a homogeneous thick mass.
- We put the cookies in a mold and tamp them, evenly distributing them over the surface. We put it to freeze in the refrigerator.
- Dissolve sugar in 80 ml of water over low heat.
- Bring to a boil, boil for another minute and remove from heat.
- Meanwhile, beat the egg yolks.
- Pour in the syrup, whisking constantly. Until the mass cools down.
- In the process of whipping, the mass will become like a cream and brighten.
- Dissolve the gelatin in the remaining water.
- Toss Philadelphia cheese with lemon/lime zest.
- Add gelatin and beat until smooth.
- Combine the cheese mass with the yolk.
- In a separate container, beat the cream until soft peaks.
- Add the cream to the previously prepared mass and mix gently with a silicone spatula until smooth.
- Pour the mixture into the cheesecake mold directly onto the crust.
- Cover the top with cling film and refrigerate for at least 5-6 hours, and best of all overnight.
- Decorate the finished cheesecake as you like. I garnished with canned cherries in my juice and made the side with whipped cream.
