Instructions

  1. Preheat the oven to 180 ° C.
  2. Make a dough with 250 g flour, 125 g butter, 1 egg, 1 pinch of salt, 50 g sugar and 1 packet of vanilla sugar.
  3. Tip: the butter should be a little cold and cut into small cubes. Sift the flour beforehand.
  4. Grease a springform pan and press the dough into the mold. Prick several times with a fork. Drain the cherries and collect the juice. Then sprinkle the cherries on the batter as soon as they have drained well. Using 400 ml of the collected cherry juice, prepare the pudding according to the instructions on the packet (but do not add any sugar!). Pour the pudding over the cherries and distribute them.
  5. Melt 100 g margarine or butter. Mix 175 g of flour, 75 g of sugar, 1 pinch of salt, 1/2 pack of baking powder and 1 pack of vanilla sugar in a bowl. Now add the melted butter and mix everything (this results in a really nasty mush, but also the crunchiest crumbles at the same time and the baking powder also makes them nice and big). Crumble the streusel onto the cake by hand.
  6. Bake at 180 ° C top / bottom heat on the middle rack for about 50-60 minutes (the baking time also depends on the oven).
  7. Tip: If the baking time is not over yet, but the crumble is already golden, cover the cake with newspaper (but only a daily newspaper - if possible without pictures. DO NOT use magazines!). This then smells a bit when baking, but does not damage the cake in terms of smell or taste, but the cake is protected against burning.
  8. Note: If you use morello cherries from your own cultivation, you should perhaps reconsider the additional sugar question. I`m only talking about bought cherries.
