Mix the chia seeds with the water in a glass and stir with a spoon for about 2 minutes. This makes the mass thick. Now add the soy milk and stir everything well with the spoon.
Now put the glass in the refrigerator for at least 15 minutes. If you like to have time, also longer. The longer the mass rests, the more the chia seeds swell and the mass becomes a nice thick pudding.
In the meantime, put the chopped hazelnuts, brown sugar and cinnamon in a pan and let caramelize while stirring constantly. It is important that you have a little patience and do not turn the stove on to full power, otherwise the ingredients will burn you. Once you`ve made it, the brittle should definitely cool down.
Now take the chia pudding out of the refrigerator, sprinkle the hazelnut and cinnamon brittle on top and serve.
