Put the almond and coconut milk in a bowl. Add vanilla and a tablespoon of honey and mix well. Stir in chia seeds. Place in the refrigerator for about 15 minutes.
Stir well again and pour the mixture into two casserole dishes. Cover with cling film and store in the refrigerator overnight.
The next day wash the strawberries and cut them into slices. Peel the banana and cut it into slices as well. Then pour the strawberries and the banana slices over the chia pudding and drizzle with a little honey.
