Finely chop the onion and garlic clove and sauté in the heated olive oil until translucent. Add the bay leaf, halve and core the tomatoes and sauté with the onion and garlic mixture for a few minutes.
Now add the spinach, put the lid on and heat until the spinach is thawed. Season to taste with salt or vegetable stock powder and freshly ground pepper.
Remove the bay leaf before serving.
