Finely chop the parsley twig and shallot. Mince the 2 garlic cloves. In a large bowl, combine the chicken mince, chopped parsley, parmesan, Italian herbs, egg, chopped shallot, minced garlic, breadcrumbs, salt, and black pepper. Mix thoroughly.
Form the mixture into meatballs about the size of a walnut.
Heat the olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat.
Fry the meatballs for 3-4 minutes, turning occasionally, until golden brown on the outside.
Pour the marinara sauce into the pan with the meatballs and stir gently to coat.
Shred the mozzarella cheese and sprinkle it over the meatballs and sauce.
Transfer the skillet to a preheated 200°C (392°F) oven and bake for 15 minutes until the cheese is melted and the meatballs reach an internal temperature of 74°C (165°F).
