Instructions

  1. Season the chicken breast and fry in 2 tablespoons of oil over medium heat for about 5 minutes per side. Remove from pan and wrap in aluminum foil.
  2. In the meantime, pluck the lettuce into pieces and chop the basil. Peel and dice the kiwi fruit. Cut the spring onions into wafer-thin slices. Cut the chicken breast into slices, mix with the lettuce, kiwi fruit, basil and spring onions in a bowl. Halve the orange, squeeze one half, peel and dice the other. Mix together juice, vinegar and remaining oil, season with salt and pepper, mix into the salad.
  3. Arrange the salad on plates and sprinkle with the orange cubes.
