Chicken Bags with Champignons Instructions

  1. Divide each chicken fillet into a large piece and a small piece.
  2. Place a large piece of chicken between two sheets of plastic wrap. Using a meat mallet, pound it to the thinnest possible thickness without tearing. Repeat with the second large piece.
  3. Place the two flattened pieces on a plate. Season with salt and pepper. Set aside for 5 minutes.
  4. Finely chop the two small pieces of chicken and the ham into small cubes. Transfer to a bowl.
  5. Add half an egg, 30g soft butter, salt, and pepper. Mix until well combined.
  6. Heat about 1 teaspoon of vegetable oil in a frying pan over medium-high heat. Pan-fry the two whole mushrooms on all sides for 5-8 minutes until golden brown.
  7. Preheat oven to 180°C (350°F). Place one flattened chicken piece on parchment paper. Spoon half the filling onto the center. Top with one fried mushroom.
  8. Wrap the parchment paper around the chicken and filling to form a sealed bag. Repeat with the remaining ingredients to form a second bag.
  9. Place the wrapped bags on a baking sheet. Bake for 30 minutes until the chicken is cooked through (internal temperature should reach 74°C/165°F).
  10. Remove from the oven and let cool slightly. Carefully unwrap the parchment paper and serve hot.
