Meanwhile, salt and pepper the chicken breast fillets and place in a baking dish. Make sure that these do not overlap.
Then finely chop the onions and garlic and fry briefly in olive oil. Add the zucchini cut into cubes and fry them as well. Quarter or eighth of the cocktail tomatoes and add. Season with a little salt and pepper. When the zucchini have turned a light brown color, distribute the 2 tablespoons of honey evenly over the vegetables and let sizzle again briefly. Cut the spring onions into small slices and add.
Now add the tomatoes and 500 ml water to the vegetables and let everything simmer until a slightly thick sauce is formed. Stir the cream into the sauce and season to taste with balsamic vinegar, salt, pepper, paprika powder and herbs.
When the desired taste is achieved, pour the sauce over the meat. Slice (or tear into pieces) the mozzarella and spread evenly over the meat and sauce. Put the whole thing in the oven and cook for 25 - 35 minutes, depending on the size of the meat.
