Instructions

  1. Halve the chicken fillets lengthways and place in an ovenproof dish. Clean the leek and then cut into rings. Peel the mango and cut into wedges. Spread both over the fillets.
  2. Peel the ginger and press it through the garlic press. Mix with coconut milk, curry and sambal oelek. Then season with salt and pepper and pour over the sauce. Bake in a preheated oven at 220 degrees (convection: 180 degrees) for 40 - 50 minutes.
  3. It goes well with fresh baguette, a mixed salad and a rosé wine.
