Peel, core and dice the pumpkin and pears. Peel the ginger and chop in the multi-chopper. Fry the vegetables in a little olive oil. Deglaze with orange juice and season with salt, pepper and 1 pinch of cardamom. Steam for about 20 minutes (check for the desired firmness!).
Now halve the chicken breast fillets lengthways and bread them like a schnitzel. Fry until golden brown on both sides.
Croquettes or duchess potatoes go well with this. The dish is also ideal for a low-carb diet without side dishes.
