Instructions
- Clean the chicken breast fillets and remove all tendons. Cut into approximately 5 cm long, narrow strips.
- In a bowl, whisk together the honey, soy sauce, and cayenne pepper until well combined. Set aside.
- Have a double layer of kitchen paper ready next to the stove.
- Heat the sesame oil in a large pan over medium-high heat for 2-3 minutes until shimmering.
- Working in batches to avoid crowding, add the chicken strips to the hot oil.
- Cook for 2-3 minutes per side until golden brown and cooked through (internal temperature 74 °C / 165 °F).
- Transfer the cooked chicken to the kitchen paper and let drain for 1-2 minutes.
- While still hot, add the drained chicken to the soy-honey mixture and stir to coat evenly.
- Let marinate for at least 15 minutes. Refrigerate if storing for later.
