Instructions

  1. Cut the mozzarella into 8 slices. Pluck the leaves from the basil.
  2. Slit open the side of the chicken breast to create a pocket to fill. Season the inside vigorously with salt and pepper, then fill with two slices of mozzarella and 3-4 basil leaves. Wrap each chicken breast with two to three slices of smoked ham and place in a baking dish. Fry at 175 ° C for about 30-40 minutes.
  3. Cut the remaining ham into thin strips and roughly chop the remaining basil leaves. Finely chop the onion.
  4. Heat the oil in a pan and sauté the onion until translucent, then add the ham and fry briefly. Deglaze with white wine and let it boil down briefly. Add the tomatoes and season to taste with granular broth, salt and pepper. Add the basil and simmer for a quarter of an hour. Finally stir in the crème fraîche and bring to the boil again.
  5. Take the chicken breast out of the oven and serve with the tomato sauce.
