Sear the chicken fillets for approx. 5 minutes on each side. No longer, otherwise they will get dry.
Wash the apples and cut into wedges, they don`t need to be peeled. Melt 2 tablespoons of butter and 1 tablespoon of sugar in the pan and add the apples. Now caramelize the whole thing well on both sides (approx. 3 minutes per side). Set aside the caramelized apples.
Chop the onion into small cubes and glaze with a little butter in the pan. Now add mustard, cream and apple juice or orange juice. Let the sauce reduce a little so that it becomes slightly creamy. Season to taste with salt, paprika and pepper. If you like, you can also add more mustard. Fold the finely chopped parsley into the sauce just before serving.
The caramelized apples are served with the chicken breasts and sauce. I recommend rice as a side dish.
