Instructions

  1. First, the broccoli is briefly held under cold water and divided into florets. Then cook it in salted water until it is done, which usually takes about 4 to 5 minutes. It is best to try when it is ready and then pour it into a sieve and quench it with cold water. If you have the option, you can of course also steam it, which makes it even more flavorful.
  2. Next to it, cook the pasta, also in salted water, according to the instructions on the package and drain.
  3. In the meantime, wash the chicken breast briefly with cold water and pat dry with kitchen paper. Then rub well on all sides with salt and pepper, preferably fresh from the mill.
  4. Now heat up a large pan. Please note that at the end of the day there must be space for the whole dish in this pan and, in the best case, a lid is available. So it is best to ensure a high edge and sufficient dia.
  5. Let the olive oil warm up briefly in the pan and fry the chicken breast over a medium to high temperature. Leave it on each side for about 3 to 4 minutes until it gets a light tan on both sides. Now take the pan off the stove and close it with the lid. So the meat can cook to the end in its own steam and stays nice and juicy. If you don`t have a suitable pan with a lid, you can of course fry the meat without it until it`s done.
  6. Now chop the garlic and, if necessary, grate the cheese while the meat is done cooking. This should not take longer than 6 or 7 minutes, provided that the heat from the stove is sufficient beforehand. To be on the safe side, just cut the thickest piece of meat and see if it`s still pink inside. In a pinch, just leave something with the lid closed. When it`s done, remove the meat from the pan and put the pan back on the stove without the lid. Now fry the garlic and bacon briefly over medium heat. If necessary, you can take a little splash of olive oil here, depending on the fat content in the bacon.
  7. Before the garlic gets color, deglaze with the cream and milk. The easiest way is to fill the cream cup with milk, bring it to the boil briefly and make sure that it does not get too hot and burn. Finally add the cheese and let it melt over low to medium heat while stirring. As soon as the cheese has melted nicely, season the sauce with salt and pepper to taste.
  8. Finally, the pasta and broccoli are added to the sauce and carefully mixed until everything is nicely mixed. Now cut the chicken breast into slices and either place on top of the pan or on plates next to it, and serve.
  9. Tips and variations:
  10. The cheese mix can be varied as you wish. It only tastes very good with Parmesan, but a mix of different types of cheese is also very tasty! You can either buy the bacon in cubes or cut strips into small pieces and place them with the meat next to the noodles. Alternatively, you can cut the meat into cubes, fry it in the pan, and then leave it in the sauce with the garlic and bacon.
