Break egg noodles into smaller pieces. Place in a heat-resistant bowl, cover with boiling water and let it steep.
Heat the oil in the preheated wok. Add the chicken, garlic, bell pepper, Schitake mushrooms, spring onions and bean sprouts and fry for about 5 minutes.
Drain the pasta well, add to the wok and fold in well. Fry for another 5 minutes.
Drizzle the soy sauce and sesame oil over the chow mein and mix well.
Remove the chow mein from the heat, place in portion bowls and serve immediately
