Instructions

  1. * Cancoillotte is a rather lean cheese (maximum 20% fat) - if you replace it with cooked cheese according to a recipe with lots of butter and cream, you can omit the 50g butter. There are recipes for cooked cheese in the database.
  2. Cook the potatoes with a little water and a little coarse sea salt and peel them while they are still warm.
  3. Heat the cooked cheese with the butter and pour it hot over the still warm jacket potatoes, sprinkle with freshly ground black pepper and a little crushed caraway - done!
  4. The dish is a sham like the Kölsche Halve Hahn, it does not contain a scrap of chicken.
  5. It is said to come from the area of Pesmes (Franche-Comté), where there used to be a lot of watchmakers. They are said to have built such good watches that no one ever had to bring them for repair, which is why these watchmakers suffered from a chronic lack of money and could therefore only afford very simple dishes that they then gave such imaginary names to perhaps eat the chicken to imagine.
