Chicken Fricassee With Sour Cream Instructions

  1. Cut the chicken fillet into small pieces.
  2. Wash the lemon and grate the zest on a fine grater.
  3. Place the chicken pieces in a microwave-safe dish and season with salt.
  4. Pour the sour cream over the chicken.
  5. Add the lemon zest and sprinkle with ground white pepper.
  6. Cut the butter into small pieces and place on top.
  7. Cover the dish with cling film.
  8. Microwave on high for 5-7 minutes, watching to prevent the sour cream from boiling, until the cling film begins to rise. The chicken must reach 74°C (165°F) internally. If any pieces appear undercooked, open the film, move them to the outer edges, and microwave for 1-2 minutes more.
