Rinse the chicken breast fillet under cold running water, pat dry, cut into 16 equal pieces and season with a little salt and pepper. Cut the mozzarella into 16 slices.
Preheat the oven to 180 degrees top / bottom heat or 160 degrees hot air.
For the sauce, mix the crème fraîche with the tomato paste and cornstarch and pour into a baking dish. Wrap the chicken pieces with bacon and place in the baking dish. Spread the mozzarella slices over the canapes and bake in the oven for 30 minutes.
