Instructions

  1. Cut the chicken breast into cubes or strips. Fry in a little sunflower oil in portions. Remove, season with salt, dust with cayenne pepper and cover.
  2. Cut the shallots into small cubes, as well as the garlic and allow to translate in the pan. Add the sliced bananas and fry them. Deglaze with the coconut milk and add the chicken stock. Let something boil down. Drizzle with a little lemon juice. Add the fried chicken again.
  3. Now it`s time to season: add a level teaspoon of ground coriander, half a teaspoon of ground turmeric, salt, a pinch of brown sugar and a few dried green peppercorns and simmer for a little longer.
  4. If you like, rub a little fresh coconut over it or use desiccated coconut.
  5. Rice tastes good with it.
