First the very tasty marinade is prepared. Simply put the yoghurt, the fresh mango and the mint in a blender and mix until the mango is pureed and the mint is very finely chopped.
Then cut the chicken into bite-sized pieces and add to the marinade. I left the chicken in the marinade for about 1 hour. That should be enough.
Later, take the marinated chicken out of the marinade and fry it with the chopped, pressed or whole garlic, the chopped chilli pepper and the chopped spring onions.
When everything is well seared, simply add the marinade and season with a pinch of salt. Delicious is that easy.
