Peel potatoes and cut into quarters, eighths, or slices.
Peel and slice onions.
Peel garlic cloves and leave whole.
Season chicken with salt, pepper, and paprika on all sides, then refrigerate for 10 minutes.
Preheat oven to 200°C (392°F).
Heat oil in a roasting pan over medium-high heat, add chicken, and cook for 5 minutes until lightly browned.
Add potatoes around the chicken.
Transfer roasting pan to oven and roast for 20-30 minutes.
Add onions, garlic cloves, and canned tomatoes to the pan.
Continue roasting until chicken reaches 74°C (165°F) internally, basting with pan oil every 10 minutes; total oven time approximately 55-70 minutes depending on chicken size.
