  1. Wash meat, pat dry. Mix honey with juice, soy sauce and sherry. Season with cinnamon, salt and pepper. Core, wash and finely chop the chilli pepper. Peel the garlic, press through and add to the marinade with the chilli.
  2. Wash herbs shake dry. Cut the basil into strips. Pluck the tarragon leaves. Add to the marinade. Let the meat steep for 5 hours.
  3. Cut the meat to the bone and fry in a grill pan for 20 minutes. Turn over and over and brush with marinade. Serve the chicken legs with basil and tarragon.
