A light table consisting of a variety of various snacks “for one bite” (okay, for one and a half bites) is, in my opinion, a very good option for a party, for an easy-going company.
Beat the egg in a shallow bowl and season with salt. Dip each chicken piece into the egg, coating all sides.
Dredge each chicken piece in breadcrumbs, coating all sides.
Heat vegetable oil in a large skillet over medium-high heat until shimmering.
Fry the breaded chicken nuggets over medium-high heat for 6-8 minutes, turning occasionally. While they cook, cut the baguette into slices, slice the fresh cucumber, and halve the cherry tomatoes. The nuggets are done when golden brown and cooked through (internal temperature 74°C/165°F). Do not overcook or they will dry out.
Thread the cooked chicken nuggets, baguette slices, cucumber slices, and cherry tomato halves onto wooden skewers, alternating as desired.
