Chicken pirzola is a delicious and juicy dish cooked on the grill. Thanks to a special method of cutting chicken thighs and a spicy marinade, the meat turns out to be incredibly soft and aromatic.
Wash and pat dry the chicken thighs with paper towels. Remove the skin. Using a sharp knife, carefully separate the meat from the bone without cutting through the joint. Flip the bone over. Clean the bone. Repeat with all thighs.
Prepare the marinade: Mix the sour cream, ketchup, chicken seasoning, and salt to taste.
Taste the marinade and adjust seasoning as needed.
Place the chicken thighs in a bowl and cover completely with the marinade. Refrigerate for at least 2 hours. Remove from the refrigerator 1 hour before cooking.
Wrap the exposed bones in foil to prevent them from burning during grilling.
Place the chicken thighs on a grill rack over hot coals. Grill over medium-high heat, turning occasionally, for 15-20 minutes until the internal temperature reaches 74 °C / 165 °F.
