Remove the skin and bones from the chicken and cut the meat into small pieces. Halve the dates, core them, peel off the hard skin and cut the dates lengthways into strips. Peel the oranges, remove the white skin and fillet the oranges, possibly cut into pieces. Cut the pineapple into cubes. Mix all salad ingredients.
For the salad dressing, mix the mayonnaise and crème fraîche with the orange juice, season with salt, pepper and Worcester sauce and mix with the salad ingredients. Sprinkle with chopped walnuts and serve immediately.
