Instructions

  1. Cut the ginger into thin slices, bring to the boil with coconut milk and chicken broth and simmer for 10 minutes on a low heat, stirring occasionally. Finely chop the chilli peppers, cut the chicken breast fillets into fine strips. Add both and simmer for another 8 minutes. Add the fish sauce, brown sugar, coriander powder. Sprinkle with coriander greens to serve.
