Melt the butter in a pan, cut the onion into cubes and fry in it, add the chopped chicken and fry well for a few minutes.
Meanwhile, dice the tomatoes and chop the parsley.
Fry the tomato cubes in the pan, season with salt, pepper and cayenne pepper. Add the cream and bring to the boil, season with a dash of white wine. Finally stir in the parsley and cashew nuts.
It goes well with penne or baguette and a green salad.
