Chicken Stuffed with Cheese Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Using a sharp knife, cut a horizontal pocket into each chicken breast, being careful not to cut all the way through.
  3. In a bowl, combine the cream cheese and mayonnaise, stirring until smooth. Mince the garlic and add it. Chop the fresh basil to taste and add it, along with the spinach. Add a pinch of salt and a pinch of pepper. Grate half of the hard cheese and fold it into the mixture.
  4. Stuff each chicken breast pocket with the filling, pressing it firmly with a spoon.
  5. Lightly oil a baking dish and arrange the stuffed chicken breasts in a single layer. Season the exterior of each breast with salt and pepper to taste.
  6. Spread the remaining filling evenly over the top of each chicken breast. If using cherry tomatoes, halve them and stir into the filling before spreading.
  7. Cover the dish with foil and bake at 180 °C (350 °F) for 30 minutes.
  8. While baking, grate the remaining hard cheese and the mozzarella.
  9. Remove the foil, top each chicken breast with the grated cheeses, and continue baking uncovered at 180 °C (350 °F) for 10-15 minutes until the cheese is golden brown and the chicken reaches an internal temperature of 74 °C (165 °F).
  10. Rest for 5 minutes, garnish with fresh herbs if desired, and serve.
