Debone one large chicken thigh, separate the meat from the skin, and cut the meat into 4-5 pieces.
Place the chicken pieces in a bowl with the teriyaki sauce and stir until well coated.
Add the togarashi spice mix, stir, cover, and refrigerate for 2-3 hours.
Pound the remaining 2 chicken thighs to flatten.
Season both sides with salt and pepper.
Brush both sides thoroughly with teriyaki sauce.
Sprinkle togarashi spice mix on both sides.
Heat a frying pan or grill to medium-high. Place the thighs on a wire rack and cook on both sides for 10-15 minutes total until the internal temperature reaches 74°C (165°F).
Thread the marinated chicken pieces onto wooden skewers, alternating with slices of sweet pepper.
Grill the skewers over medium-high heat for 10-15 minutes, turning frequently, until the internal temperature reaches 74°C (165°F).
Remove the cooked thighs from heat and cut into medium-sized pieces.
Warm the teriyaki sauce over low heat. Arrange the chicken pieces and skewers on a serving plate and pour the warm sauce over the top.
