Ingredients
Chicken thighs – 700 g (4 pcs.)
Tomatoes – 200 g (2 pcs.)
Bulgarian red pepper – 100 g (1 pc.)
Onions – 150 g (1 pc.)
Garlic – 2 cloves
Salt to taste
Ground black pepper – to taste
Seasoning for chicken – 1 teaspoon
Water (boiling water) – 100 ml
Fresh cilantro (parsley, dill) – 2 sprigs
Vegetable oil (for frying) – 45 ml (3 tablespoons)
Prepare all products according to the list. To boil water. Wash and dry the cilantro. If you don’t like cilantro, replace it with parsley or dill.
Wash chicken thighs, dry, rub with salt, ground pepper, chicken seasoning (or according to your taste). You can leave the thighs to marinate for 30-40 minutes if you are not pressed for time.
Wash the onion, dry it and cut into small cubes or quarter rings. Peel and chop the garlic.
Wash bell peppers, remove seeds, remove whitish streaks. Cut the pepper into small cubes.
Wash tomatoes, dry, cut out the place of growth of the stalk. Cut the tomatoes into small cubes.
Heat the pan well, add 2 tablespoon. tablespoons of vegetable oil and put the chicken thighs. Fry for 3 minutes, then turn over and fry on the other side for another 3 minutes, the heat should be moderate. Then transfer the thighs to a plate.
Add the remaining oil to the same frying pan, put pepper, onion, and garlic. Fry over low heat for 3 minutes, until the onion is transparent (you do not need to bring it to golden brown).
Return the chicken thighs to the pan.
Put the tomatoes and salt.
Pour in water, cover the pan with a lid and simmer over low heat for 35 minutes. Then sprinkle the chicken with chopped herbs and remove from heat.
