Instructions
- Mince the 2 garlic cloves. Zest and juice the medium lemon.
- In a small bowl, combine the minced garlic, lemon zest, lemon juice, 2 tablespoons olive oil, 1/4 teaspoon dried thyme, salt, and pepper.
- Coat the 4 chicken breasts on all sides with the mixture.
- Heat a grill pan or grill to medium-high heat. Grill the chicken for 4-5 minutes on each side until the internal temperature reaches 74°C (165°F).
- Serve the chicken with hummus, olive oil, olives, and baguette, along with a green salad.
