Quarter the chicory, cut out the stalk (otherwise it will make the salad bitter) and cut into pieces approx. 2-3 cm in size. Cut the boiled ham into 2-3 cm pieces (if you like, also in strips).
Put the egg yolks in a bowl and whisk a little with the whisk, then mix with the sour cream, oil and sugar. Season to taste with salt, pepper and paprika.
Now add to the chicory and boiled ham and mix, sprinkle with parsley.
