Cut the lower part of the chicory and cut the leaves. Peel the mandarins, divide them into wedges and make sure to remove the white skin (if necessary, you can also take the mandarins out of the tin).
Mix the crème fraiche, orange juice concentrate, salt, pepper and sugar together.
Arrange the salad with the mandarins on 2 plates. Pour the sauce on top and serve sprinkled with the chopped walnuts.
