Bring the chicken broth to a boil and cook the chicken breasts in it, allow to cool and cut into cubes. Cut the bacon into strips and fry until crispy. Peel and finely chop the eggs and mix with the parsley. Halve, core and dice the pepperoni and avocado. Cut the lettuce into strips.
Spread the rocket leaves on a plate and arrange all the ingredients on top.
For the sauce, mix well the red wine vinegar, mayonnaise and olive oil and season with salt and pepper. Serve with the salad.
